Apple Fritter Muffins
These sweet cinnamon-y muffins have all the flavor of a fresh apple fritters without all the hassle of frying oil!
Fall is here, which means it is apple-picking time at the farms! This year my amazing mother came up to visit me and we went apple picking together (which means she paid for my pounds of apples) and about a week after we picked them I still had about four apples on my counter. All I wanted was an apple fritter.
However, If there is any loop I can jump through to not have to deep fry anything ever, I will do just that. And these muffins satisfy every craving for an apple fritter with the soft center and the slight crunch of the tops with the cooked sugar. These hit the spot every time.
Why do I have to pre-cook the apples?
I know. Why dirty one more dish if we don’t have to? Trust me. Its a must.
Normally apple dishes that are not pre-cooked, such as pie, stay in the oven for much longer. Yielding a soft cooked apple. However because these are personal-sized desserts, they do not bake for long. Meaning the apples would still be crunchy in the center of the fully cooked muffin. Not as appetizing.
Since it is a muffin, is it healthy?
Well…. technically it does have fruit in it.
Nutritional Benefits: Apples are a natural source of fiber, vitamin C, and antioxidants.
However, these muffins are more like a cake with quick-acting carbs and lots of added sugars.
Now I am not saying you can’t have these for breakfast but I would advise pairing one of these delicious treats with a satiating protein, such as some scrambled eggs or chicken sausage, in order to feel more satisfied and satiated to start your day.
Grocery List
For the batter:
- 1/2 c butter (softened)
- 2/3 c sugar
- 2 eggs
- 1 tsp vanilla
- 1/4 c apple butter (apple sauce will work)
- 1 tsp salt
- 1 tsp cinnamon
- 1/2 tsp allspice
- 1 1/2 c flour
- 2 tsp baking powder
- 1/4 c milk (plant based or dairy will work)
For the apples:
- 2 c peeled and cubed apples (around 2-3)
- 1 tsp cinnamon
- 1 tbsp sugar
For the topping:
- 2 tbsp brown sugar
- 1 tsp cinnamon
Glaze (optional):
- 1/2 c powdered sugar
- 1-2 tbsp milk

Apple Fritter Muffins
Equipment
- Cupcake pan
- Muffin liners
- Small sauce pan
- Hand or stand mixer
Ingredients
Muffin Batter
- 1/2 cup butter softened
- 2/3 cup sugar
- 2 eggs
- 1 tsp vanilla
- 1/4 cup apple butter apple sauce will work too
- 1 1/2 cups flour
- 1 tsp salt
- 1 tsp cinnamon
- 1/2 tsp allspice
- 2 tsp baking powder
- 1/4 cup milk
Apples
- 2 cups peeled; cubed apples
- 1 tsp cinnamon
- 1 tbsp sugar
Sugar topping
- 2 tbsp brown sugar
- 1 tsp cinnamon
Optional Glaze
- 1/2 cup powdered sugar
- 1-2 tbsp milk
Instructions
- Start by placing your 2 cups of apples, 1 tbsp sugar, and 1 tsp cinnamon into a small saucepan and cooking on medium heat for about 10-15 minutes or until apples are fork-tender but not mushy. Take off heat and let cool
- Preheat oven to 350℉
- Cream together butter and sugar for 3 minutes, or until lightened in color and fluffy. Add eggs and vanilla. Beat till combined. Add salt, cinnamon, allspice, and apple butter. Beat till combined
- Add flour and baking powder and gently fold until most of the flour is saturated. Add your apples and milk and continue folding only until everything is combined and no floury bits remain
- In a separate small bowl, combine brown sugar and cinnamon for the topping.
- Scoop evenly among your 12 cupcake liners. Sprinkle sugar topping evenly over unbaked muffins
- Bake for 20-25 minutes or until a toothpick entered into the center comes out clean
- Optional: Combine powdered sugar and milk in a small bowl and drizzle over the warm fresh-baked muffins
