Apple Fritter Muffins

Ingredients

Muffin Batter

  • 1/2 cup butter softened
  • 2/3 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/4 cup apple butter apple sauce will work too
  • 1 1/2 cups flour
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp allspice
  • 2 tsp baking powder
  • 1/4 cup milk

Apples

  • 2 cups peeled; cubed apples
  • 1 tsp cinnamon
  • 1 tbsp sugar

Sugar topping

  • 2 tbsp brown sugar
  • 1 tsp cinnamon

Optional Glaze

  • 1/2 cup powdered sugar
  • 1-2 tbsp milk

Instructions

  • Start by placing your 2 cups of apples, 1 tbsp sugar, and 1 tsp cinnamon into a small saucepan and cooking on medium heat for about 10-15 minutes or until apples are fork-tender but not mushy. Take off heat and let cool
  • Preheat oven to 350℉
  • Cream together butter and sugar for 3 minutes, or until lightened in color and fluffy. Add eggs and vanilla. Beat till combined. Add salt, cinnamon, allspice, and apple butter. Beat till combined
  • Add flour and baking powder and gently fold until most of the flour is saturated. Add your apples and milk and continue folding only until everything is combined and no floury bits remain
  • In a separate small bowl, combine brown sugar and cinnamon for the topping.
  • Scoop evenly among your 12 cupcake liners. Sprinkle sugar topping evenly over unbaked muffins
  • Bake for 20-25 minutes or until a toothpick entered into the center comes out clean
  • Optional: Combine powdered sugar and milk in a small bowl and drizzle over the warm fresh-baked muffins
